This is one of my favorite winter salads. In the winter it seems the tomatoes are not very flavorful and quite millie. This salad gives me the flavor, crunch and freshness that I’m looking for.
Ingredients:
2 heads of romaine lettuce, chopped
1 C. thawed, frozen or canned peas
1 green pepper, chopped
3 stalks of green onion, whites and green parts, chopped
1 C. cooked bacon, crumbled
1 C. sharp cheddar cheese
You can use more or less of any of the ingredient list above.
Sweet and sour dressing:
1 C. mayonnaise or miracle whip
4 T. sugar or honey
2 T. Apple cider vinegar
More or less of the sugar and vinegar can be used depending on your taste.
What to do:
In a medium size bowl add in all your dressing ingredients, mix well. Taste your dressing and adjust the sweetener and vinegar to your taste buds. Make sure to store in fridge until just before you pour it on your salad. If you put the dressing on the salad before your ready it will make your lettuce soggy….gross!
Next, in a large bowl layer your green salad. First lettuce, peas, green peppers, green onions, bacon and then your cheddar cheese. Store with lid in the fridge until your ready to use! Enjoy!
