A perfect salad for any season; crisp apples, pears, chunks of chicken, feta cheese crumbles, roasted pecans on top of fresh romaine lettuce and then drizzled with a homemade vinaigrette.

Ingredients:
Dressing
1/4 C. Lemon juice
1/4 C. Olive oil
1/4 C. Honey
1/2 tsp. Fresh rosemary
1 tsp. Minced garlic
1 T. Aged balsamic vinegar
1/8 tsp. Ground ginger
Salt and pepper to taste
Salad
2 C. Chicken breast, chopped (about two chicken breasts)
1 apple and pear, cored and chopped
3 C. Romaine lettuce, chopped
1/2 C. Pecans or walnuts, chopped and
toasted (toasted optional)
1/2 C. Feta cheese
8 asparagus spears, chopped and steamed
or microwaved until tender
What to do:
Combine all the dressing ingredients in a bowl or jar and mix well, set aside.
Place all the salad ingredients in a large bowl. Before serving pour 1/2 of the dressing on the salad and toss well, adding the rest of the dressing to taste.
