Grilling might just be the best way to cook up a skirt steak. The marinade gives it the greatest flavor, it will keep you coming back for more. Easy and full of flavor, this grilled skirt steak is one of my favorite grilling recipes, any time of year!
Prep time: 5 minutes
Cook time: 10 minutes
Serves: 4, 1/2 pound each
Ingredients:
2 lb. Skirt Steak
Salt & pepper
For the marinade:
1/3 C. Olive oil
1/3 C. Red wine vinegar
1/3 C. Low sodium soy sauce
2 T. White sugar, honey, monk fruit or maple syrup (sweetener of your choice)
3 tsp. Minced garlic
1 tsp. Onion powder
1 tsp. Crushed red pepper flakes
What to do:
Salt and pepper steak on both sides.
In a zip lock bag or shallow dish combine the olive oil, red wine vinegar, soy sauce, sugar (or sweetener of your choice), garlic, onion powder and red pepper. Place steak in the bag and let marinate on counter top for 30 minutes, turning halfway to make sure it marinates evenly.
Grease grill with oil and preheat to high, at least 500 degrees.
Remove steak from marinade (discard any remaining marinade) and sear on the hot grill for 3 to 4 minutes per side. Steak is best when it reaches an internal temperature of 130. Cooking this cut of meat to well done will create a tough peice of meat, medium to medium rare is best. Let rest for 5 to 10 minutes. Slice very thin against the grain.
