There is just something so comforting about soup and this one is so easy to throw together. Make it in your crock pot or on the stove. This soup is hearty, full of Italian-style meatballs, cheese tortellini and fresh spinach in a tomato broth.

Cook time: 6-8 hours
Serves: 6
Ingredients:
1 pound bag of frozen Italian meatballs
4 C. beef Broth
1 can (15.5 oz.) cannellini beans or bean of choice, drained
1 jar (about 24 oz) marinara sauce
3 C. Frozen vegetables or canned
1 small yellow onion finely diced
2-3 cloves garlic, minced
2 Tablespoon Italian seasoning
Salt and pepper, to taste
1 pound bag frozen cheese tortellini
1-2 C. Fresh Spinach, frozen will work also
Grated Parmesan cheese and parsley for garnish
What to do:
Place all your ingredients except the tortellini and spinach in the slow cooker.
Set slow cooker on low for 6-8 hours.
About 7 minutes before you’re ready to eat, add frozen tortellini and spinach. Allow to cook thoroughly, salt and pepper to taste, garnish and enjoy!!!
Stove top instructions:
Place all your ingredients except the tortellini and spinach in a Dutch oven or stock pot. Simmer uncovered for 8 to 10 minutes. Stir in tortellini and spinach, cook for another 7 minutes or until cooked though. Salt and pepper then garnish and enjoy!
