This Chicken Fiesta Foil Packet is made with a Mexican flair, combining black beans, corn and salsa, it has everything you need for a great quick weekday meal. The best part about it is it can be made in the oven, grill, or over a campfire. This is a easy meal for the whole family to enjoy!

Serves: 4 servings
Ingredients:
4 chicken breasts
4 teaspoon chili powder, divided (1 per chicken breast)
8 teaspoons taco seasoning, divided (2 per chicken breast)
Salt & pepper to taste
15 oz. black beans drained & rinsed
15 oz. whole kernel corn, drained
1 cup salsa
2 fresh jalapeños, seeded or not seeded and diced (optional)
Mexican cheese
Sour cream, cilantro, onions, tomatoes & jalapenos, etc. for garnish
What to do:
Preheat oven to 350 degrees.
Place four large pieces of foil on work surface and spray each with cooking spray. Place 1 chicken breast on each piece of foil and season with chili powder, taco seasoning, salt & pepper.
Divide the beans, corn, and salsa over top of chicken breasts.
Fold in the ends to seal each packet. Place packets on a large cookie sheet to catch the drippings. For easier clean up wrap the cookie sheet in tinfoil.
Place in preheated oven and cook until the center of the breast reaches 165°F. Cooking time of course will vary, this will depend on how large and thick your chicken breasts are. It can range from 20 to 40 minutes. Once done open packets and top with cheese and your favorite garnishes.
