Ingredients:
1 heart, venison or beef
2 T. Butter or a mixture of butter and lard
4 bacon strips, thick or thin
Stuffing:
1/2 C. Panko crumbs
1 tsp. Dried parsley flakes or 2 tsp. Fresh
1/4 tsp. Dried thyme leaves or 2 tsp. Fresh
1/2 tsp. Dried rubbed sage or 1 tsp. Fresh
1/4 tsp. Salt
Pepper to taste
3 T. Water
What to do:
Cut the heart open in a spiral fashion and remove any visible strings, arteries and blood vessels; trim off excess fat, if any. Set aside.
In a small mixing bowl, combine your stuffing ingredients. Spread your mixture on the cut side of the heart. Roll the heart up, season with salt and pepper. Wrap your bacon around the heart securing with wooden toothpicks or butchers twine. Cut your heart between the toothpicks or twine.
Add butter to a 10-inch cast iron skillet over medium heat. Once your skillet is nicely heated add your heart and cook for 8 to 10 minutes turning once or twice making sure both sides are cooked until desired donenss.
