These Belgian Waffles are crispy on the outside and tender on the inside, perfect for a cool weekend morning. Top them with your favorite topping for a true breakfast treat.
Ingredients:
2, 1/4 C. all purpose flour
1 T. baking powder
3 T. sugar
1/2 Tsp. salt
1 Tsp. cinnamon, optional
2 eggs, separated
1/2 C. avocado oil
2 C. whole milk
1 Tsp. vanilla extract
What to do:
Preheat your waffle iron, spray it with non-stick cooking spray, and set aside.
In a large bowl, combine the flour, baking powder, sugar, salt, and cinnamon.
In a medium bowl, beat the egg whites with a hand mixer or stand mixer until stiff peaks form. Make sure there are stiff peaks; this is important.
Now it’s time to add everything together. Add bowl 3, the egg yolk mixture, to the dry ingredients, bowl 1, and mix well.
Fold in the egg whites from bowl 2, making sure you fold and not mix. It is important that you fold and not mix. Folding will make your batter lighter. This is what you want to achieve in a Belgian waffle.
Pour the batter onto your hot waffle iron and cook according to the manufacturer’s directions!
Enjoy with butter, maple syrup, whipped cream, powdered sugar, fresh fruit, or whatever your little heart desires!
