Ingredients:
1¾ C. chopped pecans plus extra whole pecans for decorating
¼ C. butter plus extra for brushing
½ C. dark corn syrup
½ C. light corn syrup
½ C. brown sugar
2 T. flour
1 tsp. vanilla extract
½ tsp. salt
4 eggs
1 unbaked pie shell
What to do:
Preheat oven to 350 degrees.
Spread the pecans evenly onto a rimmed baking sheet and bake until they begin to brown and become aromatic, making sure to toss halfway through, 5 to 7 minutes.
In a saucepan, gently melt the butter over medium heat. Then, proceed to add the dark corn syrup, light corn syrup, brown sugar, flour, vanilla, and salt. Mixing thoroughly until all the ingredients are well combined and fully melted.
Remove the mixture from the heat, and then allow it to cool for approximately 5 minutes. Next gently whisk in the eggs and stir in the chopped pecans. Carefully pour the pecan mixture into an unbaked pie shell, ensuring even distribution. Lastly, arrange whole pecans over the top of the pie.
Brush butter on the edges of the pie crust and bake in a preheated oven for 40-50 minutes. The pie is done when the filling barely moves when shaken. If the pie is browning too quickly, cover it with foil.
