Ingredients:
1 C. milk (dairy or dairy-free)
1/4 C. Chia seeds
2 1/2 tsp. Maple syrup, honey or other sweetener
1 tsp. Vanilla extract
Toppings: fruits, nuts, chocolate chips, coconut flakes, granola, nut butters etc.
What to do:
Place the ingredients into a mixing bowl and combine them well. Allow the mixture to rest for a period of two to three minutes; following the initial gelling of the seeds, stir the mixture once more with great care to ensure that no lumps remain.
Cover the bowl and store in the fridge overnight or for at least 2 hours, but overnight is best, it gives it a chance to really thicken up like pudding.
When you’re ready to eat it, top with your favorite fruit and enjoy cold!
* You can always add more milk for a thinner texture if your chia pudding is a bit too thick.
