Roasted nuts are addictively good, not to mention good for you, and are very easy to make. They are a great snack to have just about anytime. The options are endless; just take any of your favorite herbs, spices, nuts, and dried fruits to create endless combinations!

Makes: 2 Cups
Ingredients:
2 C. Almonds, or whichever nut you choose
1 1/2 tsp. Olive or avocado oil
2 Tbsp. fresh minced thyme leaves, or whichever herb you desire. Use 2 tsp. if using dry.
1 tsp. (Or more to taste) of kosher or sea salt
Option: mix with dried fruit
What to do:
Preheat the oven to 350 degrees.
Arrange the almonds, oil, thyme, and salt on a baking tray and mix well. Roast the almonds in a preheated oven for about 10 to 15 minutes, ensuring to turn them at 5-minute intervals, until they attain a light golden hue. It is imperative to monitor them vigilantly, as nuts can transition from under-roasted to charred in a brief span. Once roasted to satisfaction, remove them from the oven, season with additional salt to taste if need be, and leave to cool.
