Craving something awesome to pair with your Mexican feast? This recipe is a cinch to whip up and you don’t need a bazillion ingredients or a whole lot of time. In less than half an hour, you’ll have a fab side dish that’ll make your Taco Tuesday legendary. So, toss it on your menu and get ready for some yum!

Ingredients:
1 C. Uncooked rice
1 T. Oil
2 C. Chicken broth
2 T. Tomato paste or 4 oz. Tomato sauce
1/2 tsp. Miced garlic
1/4 tsp. Salt
1/4 tsp. Black pepper
1/4 tsp. Cumin
What to do:
Heat oil in a medium-sized pot over medium heat. After the oil reaches the appropriate temperature, introduce rice and sauté until it attains a rich golden brown color or toasted.
When rice is light brown (lightly toasted), add stock, tomato paste or sauce, salt, garlic, cumin and pepper to pan.
Stir the mixture thoroughly and place a lid on the pot. Allow it to simmer for a duration of 30 to 40 minutes, or until the rice is completely cooked and no liquid remains. Prior to serving, gently fluff the rice.
