2/3 C. Water
1/2 C. Peanut butter, creamy or chucky
1/2 C. Reduced-sodium soy sauce
1/4 C. Rice vinegar or red wine vinegar
1/4 C. Sesame oil
1/4 C. Honey
1/2 tsp. Hot sauce, more or less
1 T. Cooking oil
1 Sweet red pepper, chopped
2 Garlic cloves, minced
1 C. peas
5 C. Cooked chicken
2 (3 oz.) Pkg. Ramen noodles (any flavor will do; you won’t be using the seasoning packets). You can also make ramen noodles from spaghetti, recipe below, or just use cooked spaghetti. You will need about 1 lb. of dried spaghetti.
1/2 C. Chopped peanuts or cashews for garnish
2 Greens onions diced for garnish
What to do:
Combine the following ingredients in a medium-sized saucepan over moderate heat: water, peanut butter, soy sauce, vinegar, sesame oil, honey, and hot sauce. Allow the mixture to cook for approximately five minutes, stirring frequently until it is evenly heated and the ingredients are well incorporated.
Proceed to prepare the noodles as per the instructions provided on the packaging.
Concurrently, heat a frying pan over medium-low heat and pour in the oil. When the oil reaches the appropriate temperature, incorporate the red bell pepper, peas, and chicken into the pan. Continue to sauté until the chicken and the vegetables are adequately heated through. How to make ramen noodles from spaghetti.
If you want to substitute pasta for ramen noodles, you can boil pasta in water with a tablespoon of baking soda per quart. Boil the noodles two minutes past al dente so the baking soda reaches the pasta core. You will have noodles with a texture and aroma that’s passable as ramen. Drain and rinse to remove any baking soda taste.
