Serves: 4-6
Ingredients:
1 lbs. Sausage, any flavor
1 C. Diced onion
4 tsp. Minced garlic, or 4 cloves, minced
1 Diced red, yellow, or orange bell pepper
1 Diced green bell pepper
2 T. Tomato paste
1, 14.5 oz. can of diced tomatoes with green chilies
1 1/2 C. white rice
3 C. Beef broth
2 tsp. Worcestershire sauce
3-4 T. Julienned sun-dried tomatoes, chopped with the oil
2 T. Chopped fresh or dried parsley divided
1 T. Italian seasoning
1 tsp. Paprika
Salt pepper to taste
What to do:
In a deep 12-inch skillet over medium heat, add the ground sausage, onion, garlic, and bell peppers. Cook, breaking up the sausage with a spoon, until cooked through and crumbled. Stir the tomato paste, diced tomatoes, rice, beef broth, Worcestershire sauce, sun dried tomatoes, 1 tablespoon parsley, Italian seasoning, paprika, salt, and pepper. Stir to combine and bring the mixture to a boil.
Reduce the heat to a simmer, cover, and let cook until the rice is tender, 15 to 18 minutes. Add more broth if needed. Garnish with leftover parsley.
