Ingredients:
1 T. oil
5 Chicken thighs
1 tsp. Salt
1 tsp. Ground pepper
2 tsp. Onion powder
2 tsp. Garlic powder
2 tsp. Paprika
2 T. Chili powder
1/4 tsp. Cayenne pepper
2 tsp. Oregano
2 tsp. Thyme
1 Sweet pepper, Orange, Red, Yellow, it doesn’t matter.
1 Medium onion, diced
4 Garlic cloves, minced
2 T. Tomato paste
1.5 C. Rice, rinsed
3 C. Chicken stock
2 tsp. Dried parsley
What to do:
Mix together the dry ingredients, excluding the parsley. Apply only one-fourth of this mixture to all surfaces of each chicken thigh, including beneath the skin. Ensure thorough application by massaging the seasoning both on and under the skin to deeply infuse the flavors into the chicken thighs.
In a heavy-bottomed, deep-sided pan, preheat oil over a medium-high setting. It is crucial that the oil reaches the correct temperature before any ingredients are added. Once sufficiently heated, place the chicken in the pot, skin side facing downwards. Allow the chicken to cook undisturbed for approximately 3-5 minutes until the skin turns golden brown, making sure not to burn it. Then, carefully flip the chicken to cook the other side for an additional 3-5 minutes before removing it from the pan and setting it aside.
Lower the heat to medium and introduce the diced sweet pepper, onions, and garlic to the pan. Sauté these ingredients until they are nearly translucent, about 4-5 minutes. Following this, incorporate the tomato paste, chicken stock, the remainder of the spices, and parsley, mixing thoroughly. Proceed by adding the rice, stirring it into the mixture.
Bring the mixture to a boil, stirring periodically. Once boiling, place the chicken thighs back into the pan, along with any juices that have collected. Cover the pan and reduce the heat to low, allowing the contents to simmer for 20-30 minutes or until the rice and chicken are done.
Should you desire crispier chicken skin, remove the chicken, placing it on a baking sheet. Broil for 1-3 minutes, depending on your oven’s intensity, to crisp the skin effectively. Serve warm and enjoy!!.
