Hey, check out this salmon patty recipe! It’s super quick and easy to make, ready in just 30 minutes. The patties come out crispy on the outside, flaky and juicy on the inside, and packed with flavor. You gotta try it!

Serves: 4-6
Ingredients:
1 pound salmon fillet
3 T. or more of olive oil, divided
Garlic powder
Onion powder
Salt
Pepper
1 Small onion, finely diced.
1 tsp. minced garlic
1/2 Green bell pepper, seeded and diced
2 T. butter, divided, more if needed
1 C. panko bread crumbs
2 Large eggs, lightly beaten
3 T. Mayonnaise
2 tsp. Worcestershire sauce
1/4 C. of fresh parsley, finely minced, or 1/8 C
if using dried.
What to do:
Preheat the oven to 425°F. Line a rimmed baking sheet with parchment paper, foil, or a silicone liner. Place the salmon in the center, skin-side down. Drizzle with olive oil and sprinkle with garlic powder, onion powder, salt, and black pepper. Bake uncovered for 10-15 minutes (depending on the thickness of the salmon), or just until cooked through, which is about 145 degrees Fahrenheit in the thickest part of the fish. Remove from the oven. If your fish has bones and skin, remove them. Flake the salmon, set aside, and let cool to room temperature.
Heat a medium skillet over medium heat. Add 1 T. of olive oil and 1 T. of butter. Sauté the diced onion and bell pepper until golden and softened (approximately 7-9 minutes). Add the garlic and sauté until fragrant. Remove from heat.
In a large mixing bowl, combine flaked salmon, sautéed peppers, onion, and garlic, bread crumbs, eggs, mayonnaise, Worcestershire sauce, and parsley. Stir until combined. Mold into patties of your preferred size. I use a ½ cup.
In a large pan over medium-low heat, heat 1 T. oil and 1 T. butter until hot, then add salmon patties in a single layer. Sauté for 3 to 4 minutes per side or until golden brown and cooked through. Enjoy!
