Green bean almondine is the perfect side dish for any meal: crunchy, buttery, and topped with toasted almonds. I know…I know…it’s supposed to have sliced almonds, but my son ate them and all I had were whole ones! 🤷‍♀️

Serves: 3-4
1 pound green beansÂ
2 T. Cooking oil
2 T. Butter
1/3 C. Sliced almonds
1 large shallot or small onion finely chopped
2Â garlic gloves, minced
Zest and juice of 1/2 lemon
What to do:
Bring a large pot of water to a boil over high heat. Season it generously with salt.
Cook the green beans until they’re just tender when you poke ’em with a fork, about 5 to 8 minutes. They should still have a little crunch to ’em.
While the green beans are cooking, let’s get the almonds and shallots/onions ready. Heat the cooking oil and butter in a large nonstick skillet over medium heat. Then, toss in the almonds and stir them often until they start to brown, which should take about 2 to 3 minutes.
Add the shallots or onions to the skillet. Cook until tender, for 2 to 3 minutes. Then add the garlic and cook until fragrant, but do not burn it.
With tongs, transfer the green beans to the skillet. There’s no need to drain them first; the water will be cooked off.
Add the lemon zest and juice, and mix the green beans well. Serve immediately, Enjoy!!!
