Ingredients:
1/2 C. Butter, softened
1/2 C. Sugar
1/2 C. Dark brown sugar
2 eggs
1/2 tsp. Vanilla extract
1 1/4 C. All-purpose flour
1 tsp Baking soda
1 tsp Ground cinnamon
1/4 tsp. All spice
1/4 tsp Salt
2 C. Apples, chopped and peeled (about 2 medium apples)
- I chunck one cup and grate the second
1/2 C. Walnuts or pecans, chopped
Glaze:
1 C. Powdered sugar
1/4 C. Milk
1/2 tsp. Vanilla extract
What to do:
Heat oven to 350°F.
Spray a 9- or 8-inch round cake pan with cooking spray, butter, etc.
In a big bowl, use an electric mixer to beat the softened butter and sugars until they’re light and fluffy. Then, beat in the eggs and vanilla. Mix in the flour, baking soda, cinnamon, allspice, and salt. Fold in the chopped apples and walnuts. Finally, spoon the batter into the greased pan.
Just before your cake is finished baking, mix your glaze ingredients together in a small bowl and set aside.
Bake it for about 40 to 45 minutes or until a toothpick comes out clean when you poke it in the middle. While it’s still warm, pour the glaze over the cake. You can either let it cool completely or cut it into slices and serve it warm with some ice cream or whipped cream!
