These cookies are super simple to make because they are made with a cake mix! A soft-baked strawberry cookie that is melt-in-your-mouth delicious. Whip these up for an easy, delightful dessert after dinner, a hit at the bake sale, a favorite at the cookie swap, or a cheerful after-school snack.

Cook Time: 12-15 minutes
Serves: 5-10 Depending on size of cookies
Ingredients:
1 Package strawberry cake mix (regular size)
1 Egg
1/2 C. Water
3 T. Oil
1/4 C. All-purpose flour
Frosting:
Make your own or buy
3 C. Powdered sugar
1 tsp. Vanilla or strawberry extract
1-2 Drops of red food coloring (optional).
4 T. Milk
1/3 C. Butter, softened
What to do:
In a medium bowl, mix the cake mix, egg, water, oil, and flour together. Use a scoop or two spoons (to ensure they are all the same size) to drop spoonfuls of dough onto a foil-lined baking sheet. Refrigerate the dough for at least 4 hours. Once the dough has chilled in the fridge, preheat the oven to 350 degrees Fahrenheit. Remove the whole sheet of dough from the baking sheet and place it on a new baking sheet. Bake for 10-12 minutes, or until the edges are golden brown but the centers are still soft. Do not overbake. Let the cookies cool completely before frosting and decorating.
Frosting:
In a medium bowl, place the powdered sugar, vanilla or strawberry extract, milk, and butter. Beat on low speed for about 1 minute or until smooth, then on high until light and fluffy. Generously frost the cooled cookies.
Elevation above 7,000 feet add an additional 1/4 cup flour and bake 13-15 minutes.
