Ingredients:
1 pound potatoes, chopped
3 chicken breasts, cut in half (about 1 1/2 – 2 lbs), or thighs, drumsticks, quarters, etc.
2/3 cup honey
1/2 cup Dijon mustard. You can also mix your mustards. Spicy brown, whole grain, yellow mustard, etc.
2 tsp Garlic powder
2 tsp Onion powder
1/4 cup smoked paprika
Salt and pepper, to taste.
Parsley, chopped for garnish
What to do.
Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Season the chicken with salt and pepper; set aside. Place your potatoes in a 9 x 13 deep-dish casserole.
In a small bowl, mix the honey, mustard, onion powder, garlic powder, paprika, vinegar, and soy sauce. Pour the honey mustard mixture over the potatoes. Toss them together, then place the chicken, skin side up, on top of the potatoes. Bake for 30-45 minutes, depending on the cut of chicken you are cooking. If your chicken skin is getting too crispy, then tent it with tin foil.
Bake until everything is fully cooked and the chicken is golden and crispy. The chicken should reach a minimum internal temperature of 165°F (73.9°C).
