Prep Time: 5 minutes
Cook Time: 25 minutes
Serves: 6
Ingredients:
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon dried oregano
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon garlic powder
2 teaspoons parsley, freshly chopped, or 1 teaspoon dried
Salt and pepper to taste
1 tablespoon cooking oil, if necessary
1 cup or 1 large onion, chopped
1 pound ground beef, ground sausage, chicken, or turkey
3 cloves garlic, minced
29-ounce can of tomato puree or crushed tomatoes
2 cups of beef broth, more if your noodles soak it up
10 oz. large elbow macaroni, cooked (about 3 cups uncooked)
2 C. Cheddar cheese (optional), or use for garnish.
What to do:
Mix seasonings together in a small bowl; set aside.
Heat oil, if using, in a large skillet over medium heat. Add the onions and cook until translucent, about 3–4 minutes. Add the ground meat, sprinkle on the seasonings, and add salt and pepper, breaking it up with a spoon or spatula. Cook until the meat is browned and cooked through. Add the minced garlic and cook until fragrant, being careful not to burn it. Add the tomato purée or crushed tomatoes to the beef mixture and stir to combine. Pour in the beef broth and noodles, and mix. Simmer for 25 minutes (covered) or until the noodles are cooked. Add more broth if needed. Remove from heat, add two cups of cheese, (optional) and mix until melted and combined. If your not adding in the cheese use it to sprinkle on top for garnish. Enjoy!
