Ground Turkey Sweet Potato Skillet is an incredibly quick and delicious dinner that’s ready in 30 minutes or less! Get excited for a fresh, easy meal that effortlessly comes together in just one pan, or in this case, one skillet.

Ingredients:
1 lb. sweet potatoes, about 2 small, chopped into 1/2-inch pieces
2 tbsp cooking oil
1/2 cup onion, diced
3 garlic cloves, minced
1lb ground turkey
1 tsp cumin
1 tbsp. chili powder
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. smoked paprika
1/8 tsp. cayenne pepper, more to taste, optional.
Salt and pepper to taste
1 cup vegetable or chicken broth; more if needed
1 can black beans, rinsed & drained
1 cup shredded cheddar cheese, or your favorite kind of cheese. Optional
What to do:
Add cooking oil to a skillet over medium heat. Add minced garlic and onion; sauté until the onions are translucent and the garlic is fragrant. Add ground turkey to the skillet with the garlic and onion. Cook until browned. Mix in all seasonings, broth, and sweet potatoes.
Cover and cook for 10–15 minutes, until the sweet potato is fork-tender and everything melts together. Drop in the black beans during the last few minutes to warm them.
Reduce heat to medium-low and add shredded cheese on top. Cover to allow the cheese to melt for 2–3 minutes.
Add a vegetable: corn, broccoli, carrots, asparagus, Brussels sprouts, etc.
Garnish: Greek yogurt, green sriracha, pickled jalapeños, avocado, sour cream, fresh tomatoes, serranos, etc.
Christina Notes:
You may want to add in more broth so that the turkey doesn’t get dry while cooking.
If needed, broil for 1-2 minutes to melt the cheese.
Serve over rice or use as a filling for tacos.
