
Spicy Sesame Peanut Butter Noodles offer an optimal balance of convenience and exceptional flavor. This recipe serves as my preferred quick meal option when time is limited but a flavorful and satisfying dish is desired.

Ingredients:
16 oz brown rice noodles, rice noodles, or spaghetti; any noodle will work.
1 1/2–2 cups cooked protein (chicken, pork, shrimp, etc.), optional
3 to 4 large cloves garlic, minced (or 4-5 small cloves)
1 tbsp fresh ginger, minced
2/3 cup peanut butter, crunchy or smooth
4 tbsp low sodium tamari or soy sauce
1 tbsp Sriracha (adjust to taste)
1 tbsp honey or brown sugar
1 tbsp rice vinegar
1 tbsp toasted sesame oil
1 tbsp oil (for cooking)
1/3 cup hot water
Red pepper flakes, sesame seeds, chopped peanuts, or lime wedges for garnish.
What to do:
In a large mixing bowl, whisk together peanut butter, garlic, ginger, tamari or soy sauce, sriracha, brown sugar or honey, rice vinegar, toasted sesame oil, and hot water until smooth. Tip: Adjust the water amount depending on how thick or thin you prefer your sauce.
Bring a large pot of water to a boil. Add your noodles and cook according to package instructions until al dente. Drain and rinse the noodles briefly with cold water to prevent sticking. Combine noodles and sauce in a large skillet over medium heat; add your cooked protein. Toss until the noodles are evenly coated and heated through. Remove from heat and serve immediately. Garnish with extra sriracha, chopped peanuts, green onions, or fresh lime wedges, if desired.
