Ingredients:
2 pounds large or medium peeled and deveined raw shrimp
4 garlic cloves, minced
1/2 tsp. red pepper flakes (optional, or more if you like it spicier)
Salt and pepper to taste
2 (10-ounce) cans of fire-roasted diced tomatoes with green chilies, undrained
2 cups or 16 oz. of tomato puree or crushed tomatoes
1/2 tsp. dried rosemary
1 tsp. dried basil
4 tablespoons drained capers
2/3 cup halved and pitted black olives
What to do:
In a large nonstick frying pan or pot, add tomato puree or crushed tomatoes and canned tomatoes. Then, add rosemary, basil, capers, and olives to the pan. Simmer, covered, for 15 minutes. Stir in shrimp and simmer until just heated through and the shrimp are done, about 5-8 minutes. Salt and pepper to taste. Serve with homemade crusty bread!
