Ingredients:
1 T. Salt for the potato water
3 pounds of potatoes, or baby potatoes, make sure they are in bite-size pieces. Skins on or off, it’s up to you.
2 tsp Salt
1 tsp. Pepper
One stick of butter chopped into smaller pieces
1 tsp. Dried parsley
1/4 C. Parmesan cheese
1 T plus 1 tsp. garlic powder and onion powder
What to do:
Start by adding the potatoes to a medium to large saucepan and covering them with cold water by 2 inches. Bring to a rolling boil and add 1 T. of salt. Reduce the heat to maintain a gentle simmer. Boil the potatoes until they are fork-tender and the skin is just starting to split from the potatoes. Total time will vary depending on the size of your potatoes.
Drain the potatoes into a large colander. Promptly return the potatoes to the saucepan and add the rest of the ingredients. Mix thoroughly to combine. They will get a little battered, but you want that. It allows all the flavors to meld.
