Ingredients:
2 lbs. Carrots, chopped
1/4 C. Avocado oil or neutral cooking oil, more if needed.
1 tsp. Salt
1/8 C. Pure maple syrup
1 tsp. Dried thyme
Black pepper to taste
Hot maple Sauce:
2 tsp. Sriracha
2 tsp. Maple syrup
Garnish with everything bagel seasoning and parsley.
What to do:
Preheat oven to 400 degrees.
Place your carrots on a sheet pan. Drizzle with oil, maple syrup, thyme, salt and pepper to taste. Give it a little mix and place in your four-hundred-degree oven. Roast for forty minutes or until done.
Mix your hot maple sauce in a separate bowl. Double this sauce if you want more.
Add in your carrots once done and mix. Top with your garnish and enjoy!
