This creamy Cajun chicken pasta is quick, easy, and packed with flavor. It makes a great weeknight dinner. It’s ready in less than 30 minutes!

Serves: 6-8
Ingredients:
2 tsp olive oil
2 Tbsp butter
1 medium onion, diced
3 lbs chicken breasts or thighs
2-3 tablespoons Cajun seasoning, more if desired
5 garlic cloves, minced
2 tsp smoked paprika
1 tsp. Dried basil
1 cup diced tomatoes
Salt and pepper to taste
1 lb. or 16 oz of pasta
4 cups of chicken stock, more if needed
1 1/2 cups heavy whipping cream
1 cup grated Parmesan cheese
2 Tbsp parsley, finely chopped
What to do:
In a large pan over medium heat, melt butter and oil. Then add your onions. Once cooked about halfway through, add your chicken, Cajun seasoning, garlic, paprika, basil, salt, and pepper to taste. Cook your chicken and seasoning until done. Add your tomatoes and pasta and 4 cups of stock. Cook on low and cover for about 8-9 minutes, checking to make sure you don’t need any extra stock. Just keep in mind you will be adding the cream. Once your pasta is almost done, add in your cream and cheese. Mix gently to make sure everything is incorporated and the cheese has melted. Garnish with parsley.
