Naturally sweetened with banana and honey, these breakfast cookies are delightfully good for you! You’ll be amazed at how delicious they are while being healthy! Made with wholesome ingredients, they’re a fantastic choice to enjoy for breakfast or as a snack anytime during the day.

Serves: 10 large or 20 small
Ingredients:
1 medium, ripe banana
1/2 cup of peanut butter, almond butter, or cashew butter, whichever you want
1/4 cup honey
1 tsp vanilla extract
2½ cups traditional rolled oats or quick oats
1/2 cup seeds or chopped nuts: See notes below.
1 tablespoon chia seeds or 2 tablespoons flaxseed
1/4 tsp salt
1 tsp. cinnamon
1/2 cup sugar free or regular chocolate chips
What to do:
Preheat the oven to 375F degrees. Line a baking tray with parchment paper and set aside.
In a large bowl, using a hand mixer, add banana, peanut butter, honey, and vanilla extract. Mix until creamy. Add the rest of the ingredients and mix until combined.
Using a cookie scoop or tablespoon, spoon the dough onto a baking sheet lined with parchment paper. There should be approximately 10 to 20 cookies of the same size. Use the back of a spoon to gently flatten the cookies and shape them into circles.
Bake for 10-12 minutes until they are lightly golden brown. Ensure the cookies cool down for 5-10 minutes on the baking sheet before moving to a cooling rack. This will help prevent the cookies from crumbling.
Add-ins:
Dried fruit: Currents, cherries, raisins, shredded coconut, orange peel, apricots, figs, prune etc.
Seeds: sunflower, pumpkin, and sesame, etc.
Nuts: Almonds, Brazil Nuts, Cashews, and Chestnuts. Hazelnuts (Filberts), Macadamia nuts, Pecans, Pine nuts, Pistachios, and Walnuts, to name a few, along with Peanuts (technically legumes), etc.
