Raise your hand if you want a 5-minute cookie RIGHT NOW. It’s most of us, right?! Easy No-Bake Cookies are a classic! Made with chocolate, peanut butter, and oats, they come together in minutes and are great to make with kids!
Prep Time: 5 minutes
Cook Time: 5 minutes
Serves: 12-24 depending on size
Ingredients:
2 C. sugar
4 T. cocoa
1 stick of butter
1/2 C. milk, more if needed
2 T. of vanilla
1/2 C. peanut butter
3 C. oatmeal
Optional add-ins:
Dried fruit, coconut flakes, nuts, spices etc.
What to do:
Gather all your ingredients and measure them out. Line two large baking sheets with parchment paper and set aside.
Combine the sugar, cocoa, butter, and milk in a large saucepan to start a delightful treat! Heat the mixture over medium heat, stirring often to create a perfect blend, making sure everything melts together. Bring the mixture to a joyful rolling boil and let it bubble for 60 seconds (don’t forget to set a timer!), stirring occasionally to guarantee it all comes together beautifully.
Remove from heat and stir in peanut butter and vanilla extract until blended. Add the oats and mix until they’re coated. Drop spoonfuls onto the prepared baking sheets using a 1.5 tablespoon cookie scoop. Allow them to cool for 20 to 30 minutes, then serve and relish every delightful bite!
Christina’s Notes:
For peanut butter oatmeal no-bake cookies, omit the cocoa. To add a little get-up-and-go to the mix, throw in 1/2 to 1 cup of mixed nuts. Add whatever delights your fancy.
