Ingredients:
2 slices of country bread, whole wheat or white; whatever strikes your fancy
2 large eggs
2 tablespoon unsalted butter
Salt and pepper
What to do:
Heat a medium size skillet over medium-high heat, butter the skillet, and cut a circle out of your favorite toast using the rim of a glass or a cookie cutter. Plop the bread on the hot pan and crack the egg into the hole. Cook your little circle bread on the side. Sprinkle salt and pepper over egg and cook 3 minutes. Carefully flip egg and bread over, and cook for another 30 to 40 seconds, until egg is cooked to your desired doneness. Transfer to a plate and serve.

My son dips his in syrup, but you can also use jam, jelly, preserves or fresh fruit.
