Chicken Parmesan Casserole
Prep Time: 10 minutes
Cook Time: 45 minutes – 1 hour
Serves: 6-8
Ingredients:
2 (24 oz. or so) jar of spaghetti sauce or marinara sauce
4 chicken breast cut in half, lengthwise, or cut into bite-size pieces *see notes
1.5 C. mozzarella (divided)
2 C. panko breadcrumb
1 C. parmesan cheese
2 T. Italian seasoning
Salt and pepper to taste
What to do:
Preheat oven to 375 degrees.
Season your chicken with salt and pepper on both sides and set aside.
In a 9×13 baking dish spread your tomato sauce evenly on the bottom. Next, layer your chicken evenly on top of the sauce. In a medium size bowl mix together the 1/2 C. mozzarella, bread crumbs, parmesan cheese, and Italian seasoning. Then evenly spread that on the chicken. Bake for 45 minutes to 1 hour or until done, the last 10 minutes or so before it’s done you will take out the casserole and evenly spread the rest of the mozzarella, bake until golden brown. Sometimes, when I’m in a hurry, ok when I’m super hungry, I will put it under the broiler for a few minutes to melt the cheese. Serve over noodles, rice or mashed potatoes……Enjoy!!!
Christina’s Notes:
The chicken breasts that I use are large so I use 4, but if using smaller ones you might want to use 6 in your casserole. If your breading is getting too brown go ahead and cover it with tin foil then cook until done.
