

The Sweet Potato Pie is an absolutely delightful holiday dessert to create and enjoy with loved ones. Crafting it is a breeze with basic ingredients, making it an ideal make-ahead indulgence!

Cook Time: About 1hour and 45 minutes, this includes roasting the sweet potatoes.
Serves: 8-10
Ingredients:
1 store-bought deep-dish pastry pie shell or make your own
2 lbs. or about 3 large or 4-5 medium sweet potatoes
1 tsp. Vanilla extract
6 T. Melted butter
1 tsp. Ground Cinnamon
1/4 tsp. Ground nutmeg
1/4 tsp. Ground ginger
3 eggs
1 C. Brown sugar
1/2 C. Whole milk or 1/3 C. Evaporate milk
What to do:
Follow baking instructions on the package for a store-bought pastry pie shell.
Preheat oven to 425°F.
Wash those sweet potatoes really well in cold water to get rid of any dirt or gunk. Then chop off any yucky bits and cut ’em in half before you do anything else.
Place your sweet potatoes with the cut side down on a greased cookie sheet. Stick them in the oven for about 45 minutes to 1 hour, depending on how big they are. To check if they’re done, just poke a knife into the center; if it slides in easily, your sweet potatoes are good to go.
Once the sweet potatoes are done cooking, take them out of the oven and let them chill for a bit, while you gather all the other ingredients to put in a big mixing bowl. This way the sweet potatoes can cool down a bit so they can be easier to handle.
Reduce oven temperature to 350°F
Take the skins off of your sweet potatoes. The skin should easily peel away from the flesh. Then add them to the mixing bowl with the rest of the ingredients. Using a hand mixer, combine and mix the ingredients well! It should be smooth and creamy.
Place your pie shell on a cookie sheet to help with any over spill and ease with transportation from in and out of the oven.
Pour your yummy pie filling into the pie shell you prepared. Spread it evenly within the shell. Pop the pie in the preheated oven and bake for 45-50 minutes, or until the edges are set, the top is golden brown, and the center is mostly firm with just a slight jiggle. Take it out of the oven to cool, then slice it up, add any garnish you like, and it’s ready to serve!
