It’s a classy recipe you’ll be using for years to come! This salad makes a delicious side, its great for potlucks, bbq’s, dinner parties, and any and all summer cookouts!
Prep time: 10 minutes
Serves: 6 to 8
Ingredients:
6 C. Broccoli florets, cut into bit size pieces
1/2 C. Chopped celery
1/2 C. Raisins or Craisins
8 pieces of bacon, cooked and crumbled
1/3 C. Red or sweet onion, chopped
1/2 C. Chopped almond, sliced or slivered will work also
Dressing:
2/3 C. Mayo
1 T. Lemon juice
1/4 C. Honey or 1/3 C. Sugar
What to do:
In a mixing bowl whisk together mayo, honey or sugar if using, and lemon juice, set aside.
In a large bowl add broccoli, celery, raisins or craisins, bacon, onions, and almonds. Pour the creamy dressing over the mixture, toss to evenly coat all those goodies. Serve right away or let set for an hour.
Christina’s notes:
*Toast your almonds for an extra layer of flavor and crispness.
*Small cubs of cheese is a welcome addition. The type and flavor is up to you.
*Try using different kinds of nuts. I love salted Sunflower seeds.
*By letting your salad sit for an hour it will allow the flavors to blend and it softens the broccoli slightly.
*If you want your nuts crunchier, hold off on adding them to the rest of the ingredients and mix them in the salad just before serving.
